Ginger Soda
I am obsessed with ginger! I eat it, I drink it…in whatever forms it comes, I’m here for it. The benefits of ginger are endless. Essentially, it’s a root that is widely used as a spice and a natural remedy such as digestion, inflammation, muscle pain, and soreness, may even reduce menstrual pain, and boost the immune system! So here's a simple recipe for a healthy ginger soda that you can make at home and skip on any added sugars - or not; up to you.

Ingredients
1 cup fresh ginger root, peeled and grated
4 cups water
1/4 cup honey
1/4 cup fresh lime juice
Sparkling water or club soda, for serving
Ice cubes
Optional: fresh mint leaves, lime wedges, or sliced ginger for garnish
Instructions:
In a saucepan, bring the grated ginger and water to a boil. Reduce the heat to low and simmer for 20-30 minutes.
Remove the ginger from the heat and let it cool for a few minutes.
Strain the ginger-infused liquid through a fine-mesh sieve into a pitcher or large jar.
Add the honey and lime juice to the ginger-infused liquid, and stir until the honey is dissolved.
Chill the ginger syrup in the refrigerator for at least 30 minutes.
To serve, fill a glass with ice cubes and pour in the ginger syrup to about 1/3 to 1/2 full.
Top off the glass with sparkling water or club soda, and stir gently.
Garnish with fresh mint leaves, lime wedges, or sliced ginger if desired.
