Spinach and Persimmon Salad

Ingredients
6 cups of fresh spinach leaves, washed and dried
2 ripe persimmons, peeled and thinly sliced
1/2 cup of crumbled goat cheese
1/4 cup of chopped walnuts
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
Salt and pepper, to taste
Instructions:
In a large salad bowl, combine the spinach, persimmons, goat cheese, and walnuts.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make a dressing.
Pour the dressing over the salad and toss gently to coat.
Serve immediately and Enjoy!
