Spinach and Persimmon Salad

Spinach and persimmon salad is a simple and delicious salad that can be enjoyed as a side dish or as a light lunch.

Ingredients

  • 6 cups of fresh spinach leaves, washed and dried

  • 2 ripe persimmons, peeled and thinly sliced

  • 1/2 cup of crumbled goat cheese

  • 1/4 cup of chopped walnuts

  • 2 tablespoons of olive oil

  • 1 tablespoon of balsamic vinegar

  • Salt and pepper, to taste


Instructions:

  1. In a large salad bowl, combine the spinach, persimmons, goat cheese, and walnuts.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make a dressing.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Serve immediately and Enjoy!

You can also add sliced red onions or diced apples for a nice crunch, or you can change the cheese for other like blue cheese, feta, or any other you like. You can also add some pomegranate seeds for a nice pop of color and flavor.
