Salmon Power Bowl
Salmon and sweet potato salad is a healthy and flavorful dish that can be enjoyed as a light lunch or dinner. Please read all ingredient lists to ensure you’re not allergic or intolerant to any ingredients.
Ingredients
1 lb of salmon fillet
1 large sweet potato, peeled and diced
1/4 cup of diced red onion
1/4 cup of chopped fresh parsley
2 tablespoons of olive oil
1 tablespoon of lemon juice
Salt and pepper, to taste
Instructions:
Preheat the oven to 400 degrees F.
Place the sweet potato on a baking sheet and toss with 1 tablespoon of olive oil, salt, and pepper.
Roast in the oven for 20-25 minutes, or until the sweet potato is tender.
Season the salmon fillet with salt, pepper, and remaining olive oil.
Place the salmon on a baking sheet and bake for 12-15 minutes, or until the salmon is cooked through.
Remove the salmon and sweet potato from the oven and let cool for a few minutes.
Flake the salmon into large chunks and add it to a large bowl with the sweet potato, red onion, and parsley.
In a small bowl, whisk together the lemon juice, salt, and pepper to make a dressing.
Pour the dressing over the salad and toss gently to coat.
Serve immediately and enjoy!
