Mango Cream

Ingredients:

  • 1 mango, peeled and diced

  • 1/4 cup orange juice

  • 1 tablespoon lemon juice

  • 1 tablespoon agave nectar (optional)

  • 1 cup organic whipping cream OR 1 carton of soft tofu OR 1 large ripe banana

Instructions:

  1. Prepare the Mango Puree: Place the diced mango, orange juice, lemon juice, and agave nectar (if using) in a blender. Blend the ingredients for about 1 minute or until you achieve a smooth puree.

  2. Prepare the Whipped Cream, Tofu, or Banana:

    • If Using Whipping Cream: In a separate bowl, beat the whipping cream at medium speed with an electric mixer until soft peaks form. This usually takes a few minutes. Set aside.

    • If Using Tofu or Banana: If using soft tofu, blend it in a food processor or blender until smooth and creamy. If using a ripe banana, blend it until creamy consistency is achieved.

  3. Combine Mango Puree and Creamy Base: Pour the mango puree into a medium bowl. If you've prepared whipped cream, gently fold it into the mango puree, using a spatula to combine. If you've chosen tofu or banana, fold it in using the same method. Use a knife to swirl the mixture, creating a marbled effect.

  4. Chill and Serve: Once the mango cream is well combined, refrigerate it for at least 30 minutes to let the flavors meld. Serve chilled in individual bowls or glasses. Garnish with fresh mango slices or a sprinkle of cinnamon if desired.
