Protein Matcha Pancakes
Ingredients:
1 cup keto pancake mix (such as Birch Benders Keto Pancake & Waffle Mix)
1 scoop of your favorite protein powder (vanilla or unflavored)
1 tablespoon ceremonial-grade matcha powder
1 egg
1/2 cup unsweetened cashew milk (or any plant-based milk of your choice)
1 tablespoon ground flaxseed
1 tablespoon honey or maple syrup (optional, for sweetness)
Fresh blueberries
A small amount of ghee for greasing the skillet if need be
Instructions:
In a mixing bowl, combine the keto pancake mix, protein powder, and ceremonial-grade matcha powder. Mix well to ensure the dry ingredients are evenly incorporated.
In the same bowl, add the egg and unsweetened cashew milk. Whisk together until well combined. You can add honey or maple syrup to sweeten the batter if desired.
Slowly pour the wet ingredients into the dry ingredients while stirring continuously. Mix until you have a smooth and thick batter. If the batter appears too thick, add a splash of milk.
Heat a small stainless steel skillet over medium heat. Add a small amount of ghee to the skillet and let it melt, coating the surface evenly.
Scoop approximately 1/4 cup of the batter onto the heated skillet for each pancake. Use the back of a spoon to spread the batter into a circular shape.
Cook the pancakes for about 2-3 minutes on one side, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 2-3 minutes or until golden brown and cooked through.
Remove the pancakes from the skillet and stack them on a plate.
Sprinkle fresh blueberries on top of the stack of pancakes. The blueberries will add flavor and a pop of color to the dish.
If desired, you can drizzle honey or maple syrup over the pancakes for added sweetness.
