Prep time: 20 minutes
Makes: 25 truffles

Ingredients:

  • 1 cup raw cacao powder

  • 1 cup cashews or macadamia nuts

  • 1⁄2 cup maple syrup

  • Water (as needed for mixing)

  • Roll-in ingredients: shredded coconut, chopped nuts, chocolate nibs, raw sugar, cacao powder, ginger, or other preferred toppings

  • 2 scoops of protein powder

Instructions:

  1. In a food processor, grind cashews or macadamia nuts until they turn into a fine powder. Can add protein powder here. Gradually add water as needed to create a thick paste-like consistency.

  2. Pour in the maple syrup and continue pulsing the mixture in the food processor until it is well combined and forms a smooth texture.

  3. Slowly incorporate the raw cacao powder into the mixture. Pulse again until the cacao powder is fully integrated and the mixture has a uniform chocolatey appearance.

  4. Once the mixture is well blended, transfer it into a bowl. Cover the bowl with a lid or plastic wrap and place it in the refrigerator for at least four hours or overnight. Chilling the mixture will make it easier to work with when forming the truffle balls.

  5. After the mixture has chilled and firmed up, take teaspoon-sized amounts of the mixture and roll them between your hands to form small truffle balls.

  6. Prepare your roll-in ingredients in separate bowls. These can include shredded coconut, chopped nuts, chocolate nibs, raw sugar, cacao powder, ginger, or any other toppings you prefer.

  7. Roll each truffle ball in the chosen roll-in ingredient until it's evenly coated. Gently press the toppings onto the truffles to ensure they adhere.

  8. Place the coated truffles on a plate or tray lined with parchment paper.

  9. Once all the truffles are coated, return them to the refrigerator for a short while to allow the toppings to set and the truffles to firm up slightly.

  10. Once fully chilled and set, your raw chocolate truffles are ready to be enjoyed! Store them in an airtight container in the refrigerator.

Health Benefits

  1. Antioxidant-Rich Ingredients: Raw cacao powder is a powerhouse of antioxidants, particularly flavonoids, which can help combat oxidative stress and reduce the risk of chronic diseases.

  2. Heart Health: Nuts, like cashews or macadamia nuts, are rich in healthy fats, including monounsaturated and polyunsaturated fats. These fats can contribute to heart health by reducing bad cholesterol levels and supporting overall cardiovascular function.

  3. Dietary Fiber: Nuts and cacao powder contain dietary fiber, which supports healthy digestion, regulates blood sugar levels, and can contribute to a feeling of fullness, aiding in weight management.

  4. Mineral Content: Cashews and cacao powder provide essential minerals such as magnesium and iron. Magnesium supports muscle and nerve function, while iron is vital for oxygen transport in the blood.

  5. Natural Sweetener: Maple syrup is a natural sweetener that contains trace minerals like manganese and zinc. It's a better alternative to refined sugar, as it doesn't cause the same rapid spikes in blood sugar levels.

  6. Mood Enhancement: Dark chocolate and raw cacao contain compounds like theobromine and phenylethylamine, which may contribute to mood enhancement and the release of "feel-good" hormones.

  7. Energy Boost: Nuts and cacao are sources of healthy fats and carbohydrates, providing sustained energy throughout the day without causing drastic blood sugar spikes.

  8. Immune Support: The antioxidants in cacao and the nutrients in nuts can contribute to overall immune system support, helping to protect the body against infections and illnesses.

  9. Anti-Inflammatory Properties: The antioxidants in cacao may have anti-inflammatory effects that can help reduce inflammation in the body.

  10. Gluten-Free and Dairy-Free: This recipe is naturally gluten-free and dairy-free, making it suitable for individuals with gluten sensitivity or lactose intolerance.

  11. Portion Control: The small, bite-sized truffles can help with portion control, preventing overconsumption while still satisfying your chocolate cravings.

  12. Personalization: The recipe allows for personalization with various roll-in ingredients, enabling you to add superfoods like ginger or healthy nuts for additional nutritional benefits.

  13. No Artificial Additives: By using whole, natural ingredients, this recipe avoids artificial additives and preservatives commonly found in store-bought treats.
